IN the 1950s, a researcher (Ancel Keys) developed a theory called the lipid hypothesis, noting a direct link between saturated fat and cholesterol & coronary heart disease. Many researchers have dismissed his theories - but I think this is where the idea came from. I'd suggest you read the book Nourishing Traditions by Sally Fallon. It explains a lot about the history of "diets", fats, and food in the U.S. vs. food in other countries. A great read!
